Freezing roe


This topic came up a while back and I agreed that fresh roe, frozen before curing,might as well go straight into the garbage.On a recent trip to the Charlottes I was forced to freeze my roe (forgot my procure)and brought it home expecting the worst.well to my surprise when thawed out the eggs looked fresh.I've cured them now and they turned out as good as any I've made.I froze some eggs many moons ago and they turned to soup.Maybe it has to do with the speed that freeze or maybe I just got horseshoes up my *** Bottom line is I'm a happy camper with a new viewpoint on freezing fresh eggs. cheers


I have frozen the eggs too. It really did not make a difference. Just thaw it out put it on newspaper and let it dry for a couple hours then find a VERY SHARP KNIFE and cut quarter size peices off. In my last couple of cures I have been using jsut salt and pink coolaid and had great results.

Oh ya put it in the fridge too


Ya freezing doen't matter once you thaw it out add 1 cup of pickling salt and 2 cups water and it turn out great!


Ryan, I would hate to smell the inside of your house when you thaw that crap out. Instead of being so cheap, just buy some cure and put it on the roe when you get home. It makes the texture and colour so much nicer, plus it stays on the hook a lot better.

If you throw fresh roe in the freezer, it still takes about 4 to 6 hours to freeze, and then another 4 hours to thaw. Thats as much as 10 hours without cure, plus the amount of time between taking it out of the fish while at the river to the time you put it in the freezer. Maybe as much as 12 to 14 hours without cure.

Heck no robert that's where you wrong when you put on all the cure JUNK it just messes it up plain salt and the water works great. It stays on the hook much better. Cure is just a bunch of over hyped garbage!


i agree with ryan just use plain ole borax it works best dont use all that other junk


I have a question:
Where can I get dog roe, I mean buy it fresh, without anything on it and what is the price. I cure my own, but I don't like killing that many fish. I find myself using more roe than I get from the odd fish that I kill. I hate storebought roe. I need a source to get around 10 lbs or so for the rest of coho and into the steel season. Anyone who knows anything please answer soon. I want to go this weekend and I will probably run out soon after.

I think you can still get it from Bruce's market in Albion, they used to sell fresh roe.
